I’m through the first week of the South Beach Diet. Success so far - 6 pounds lost since last Monday. So far, this diet seems to be a lot easier to follow than Atkins, and I feel MUCH better than I did with Atkins. Plus, it just makes more sense. The theory of cutting down on sugars and processed food is a lot more plausible as a long-term solution than just subsisting on a diet of meat and cheese.
The hardest part was Halloween, but we got the candy out of the house fairly quickly, and I didn’t touch a single piece of it. My favorite part is a dessert made from ricotta cheese, cocoa poweder, vanilla extract, and Equal (nutrasweet). I know it sounds disgusting, but trust me, it isn’t. Of course, I upped the cocoa and Equal content considerably from the recipe, and it turns out to be pretty damn close to chocolate cheesecake. Yum.
